There are no shortcuts! All meats are hand-trimmed and rubbed with spices then marinated overnight.
We rely on our pitmasters’ highly trained skills and senses to determine when the meat is at its optimal flavor profile.
Meats spend up to 14 hours in our smoker over pecan wood and are never rushed!
